Cake Batter Rice Krispies TreatsFor the past six weeks, I have been keeping track of my calorie intake in an effort to lose the baby weight that I gained while pregnant with my daughter. I am happy to report that I am right on track with my weight loss goals. I have only about seven more pounds to go until I am back to my pre-pregnancy weight of 120 pounds.

When I say I am watching the number of calories that I consume each day, I simply mean that I am keeping a closer eye on the foods that I put into my body. My daily goal is between 1,850 and 2,000 calories. Some days I fall right in the middle. Sometimes I am on the lower side of my goal. Other days I am on the higher side. Other days, too, I eat more than 2,000 calories. Really, my calorie goal is just a general guideline. I am by no means one of those crazy dieters who count each and every calorie and freaks out about too many. I am simply using my calorie goals as a general way to make sure that I am eating a healthy diet each and every day.

And, yes, a healthy diet includes the occasional indulgence. Just last weekend, I had some friends over to my house for dinner. I made a homemade lasagna and some decadent cake batter Rice Krispies treats for dessert. I began by melting the butter in a large pan. To the melted butter I added a bag of miniature marshmallows that I also melted. Once the marshmallows were completely melted, I slowly folded in the Rice Krispies and sprinkles. Once the cereal and sprinkles were completely coats, I pressed the mixture into a greased cake pan. After about thirty minutes of letting the Rice Krispies treats cool, I cut the delicious treats into twelve individual treats. Yum!

At first I thought that cake batter Rice Krispies treats would be horribly high in calories. After all, a single bag of miniature marshmallows contains 1,000 calories alone. But, as I discovered after doing a little math, this yummy treat is not all that bad. The butter adds 300 calories to the 1,000 of the marshmallows. The dry cake mix adds about 372 calories. The Rice Krispies and sprinkles are 624 and 390 calories. The grand total for the entire tray of treats is 2,686 calories. Cut the entire pan into twelve bars, and each bar contains approximately 225 calories (223.83 to be exact). So, although not the healthiest food choice in the kitchen, my cake batter Rice Krispies treats are also not the most caloric treat in the world either. Plus, a healthy diet also includes some sinful treats once in a while!

Ingredients

  • 3 tablespoons of butter
  • 10.5 ounces of miniature marshmallows
  • 1 cup of dry yellow cake mix
  • 6 cups of Rice Krispies
  • 3.75 ounces of sprinkles

Directions

  1. Add the butter to a large saucepan.
  2. Melt the butter over low heat.
  3. Add the miniature marshmallows to the butter.
  4. Melt the marshmallows over low heat.
  5. Slowly stir in the dry cake mix.
  6. Remove the melted mixture from the heat.
  7. Immediately fold the Rice Krispies and sprinkles into the melted marshmallows.
  8. Press the mixture into a greased cake pan.
  9. Allow the mixture to cool for thirty minutes before cutting.
  10. Cut the Rice Krispies treats with a greased knife.
  11. Store any uneaten cake batter Rice Krispies treats in an airtight container.
